Cajun-Glazed Salmon with Roasted Vegetables



This dish combines the rich, spicy flavors of Cajun cuisine with the tender, flaky goodness of salmon and roasted vegetables, making it a satisfying and delightful meal.


Ingredients:

For the Cajun-Glazed Salmon:

  • 4 salmon fillets (about 6 ounces each)

  • 1/4 cup Yum-Yum Cajun sauce

  • 1 tablespoon olive oil

  • 1 teaspoon Cajun seasoning (for extra flavor)

  • Salt and pepper to taste

For the Roasted Vegetables:

  • 2 cups of your favorite mixed vegetables (e.g., bell peppers, zucchini, red onions)

  • 2 tablespoons olive oil

  • 1 teaspoon Cajun seasoning

  • Salt and pepper to taste

Instructions:

For the Cajun-Glazed Salmon:

  1. Preheat your oven to 375°F (190°C).

  2. Place the salmon fillets on a baking sheet lined with parchment paper or a lightly greased baking dish.

  3. Brush each salmon fillet with olive oil, then season with Cajun seasoning, salt, and pepper. This will give your salmon an extra Cajun kick.

  4. Spoon the Yum-Yum Cajun sauce evenly over the salmon fillets.

  5. Bake the salmon in the preheated oven for 12-15 minutes or until the salmon flakes easily with a fork and has a beautiful glaze.

For the Roasted Vegetables:

  1. While the salmon is baking, prepare the roasted vegetables. In a mixing bowl, toss the mixed vegetables with olive oil, Cajun seasoning, salt, and pepper until they are well coated.

  2. Spread the seasoned vegetables on a separate baking sheet lined with parchment paper.

  3. Roast the vegetables in the same preheated oven for about 20-25 minutes, or until they are tender and slightly caramelized.

To Serve:

  1. Once the salmon is done baking, carefully transfer each fillet to a plate.

  2. Arrange a generous portion of the roasted Cajun-spiced vegetables alongside the salmon.

  3. Drizzle any remaining Cajun sauce from the baking dish over the salmon fillets for an extra burst of flavor.

  4. Garnish with fresh chopped herbs like parsley or chives for a pop of color and freshness.

  5. Serve your Cajun-Glazed Salmon with Roasted Vegetables immediately and enjoy the bold and spicy flavors of Louisiana right in your own kitchen!
